Ingredients
- 2 tbsp Nutricost’s Pantry White Cheddar
- 2 tbsp butter
- 2 whole roma tomatoes diced
- 2 tbsp all-purpose flour
- 2 cups unsweetened coconut milk
- ½ packet taco seasoning
- 8 oz Mexican blend cheese shredded
- ¼ cup chopped fresh cilantro
- ½ cup plain greek yogurt
- Tortilla chips (for serving)
Directions:
- Heat the butter in a medium saucepan over medium heat until melted.
- Add half of the diced tomato and allow it to cook for about 1 minute. Mix in the flour, ensuring everything is evenly coated and blended together.
- Shortly after incorporating the flour, blend in the coconut milk. Gradually pour it in while whisking continuously until fully incorporated. Bring the mixture to a boil, then lower the heat to a simmer. Introduce the taco seasoning and stir until thoroughly mixed. Whisk intermittently for 6-7 minutes or until the desired thickness is achieved.
- Return the heat to medium and gradually add the cheese, one cup at a time (8 ounces equals roughly 2 cups of cheese), whisking until smooth after each addition. Incorporate the fresh cilantro.
- Switch off the heat and gently incorporate the greek yogurt. It should meld swiftly and blend completely.
- Serve promptly with chips, adorned with additional chopped cilantro and the leftover diced tomatoes. Alternatively, you can maintain warmth in a slow cooker until serving time. Enjoy!
