Celebrate Cinco de Mayo with this deliciously healthy and easy-to-make queso recipe! Indulge in the richness of extra cheesy goodness, elevated by our Pantry White Cheddar Cheese powder. Enjoy the festivities with every creamy, savory dip!


Ingredients

  • 2 tbsp Nutricost’s Pantry White Cheddar
  • 2 tbsp butter
  • 2 whole roma tomatoes diced
  • 2 tbsp all-purpose flour
  • 2 cups unsweetened coconut milk
  • ½ packet taco seasoning
  • 8 oz Mexican blend cheese shredded
  • ¼ cup chopped fresh cilantro
  • ½ cup plain greek yogurt
  • Tortilla chips (for serving)

Directions:

  1. Heat the butter in a medium saucepan over medium heat until melted.
  2. Add half of the diced tomato and allow it to cook for about 1 minute. Mix in the flour, ensuring everything is evenly coated and blended together.
  3. Shortly after incorporating the flour, blend in the coconut milk. Gradually pour it in while whisking continuously until fully incorporated. Bring the mixture to a boil, then lower the heat to a simmer. Introduce the taco seasoning and stir until thoroughly mixed. Whisk intermittently for 6-7 minutes or until the desired thickness is achieved.
  4. Return the heat to medium and gradually add the cheese, one cup at a time (8 ounces equals roughly 2 cups of cheese), whisking until smooth after each addition. Incorporate the fresh cilantro.
  5. Switch off the heat and gently incorporate the greek yogurt. It should meld swiftly and blend completely.
  6. Serve promptly with chips, adorned with additional chopped cilantro and the leftover diced tomatoes. Alternatively, you can maintain warmth in a slow cooker until serving time. Enjoy!
