Wet Ingredients:
- 1 ½ cup semi-sweet chocolate chips
- ½ cup refined coconut oil
- 3 eggs
- ¾ cup frozen banana
- 2 tsp vanilla extract
Dry Ingredients:
- ½ cup Nutricost chocolate whey protein
- ⅓ cup almond flour
- 2 tbsp cocoa powder
- ¼ tsp salt
Instructions:
1. Preheat the oven to 350 degrees Fahrenheit. Take an 8x8 pan and line it with parchment paper, ensuring it covers the bottom and sides. Set the pan aside for now.
2. In a bowl, combine 1 cup of chocolate chips (keep the other 1/2 cup aside) and coconut oil.
3. Melt the mixture in the microwave using 30-second intervals, stirring in between each interval, until fully melted.
4. While the chocolate mixture is melting, take another bowl or the bowl of a stand mixer and add the eggs and coconut sugar. Beat them together for about 1 minute until well combined.
5. Next, beat in the vanilla extract and the melted chocolate mixture until everything is thoroughly incorporated.
6. Now, add the remaining dry ingredients and beat the mixture until you achieve a smooth batter consistency.
7. Gently fold in the remaining 1/2 cup of chocolate chips into the batter.
8. Transfer the batter to the prepared pan, spreading it evenly, and place it in the preheated oven.
9. Bake for approximately 22-28 minutes.
10. Once baked, remove the pan from the oven and allow the brownies to cool in the pan for 10 minutes. Then, carefully lift them out using the parchment paper and let them cool.
