Ingredients
- 2 scoops Nutricost’s vanilla whey protein powder
- 3 small-medium bananas (1 cup mashed)
- 3 eggs
- 1 tbsp honey
- 1 tsp vanilla
- 1 3/4 cup almond flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- Pinch of salt
- 1/2 tsp cinnamon
- 1/3 cup almond butter
Directions:
- Preheat the oven to 350 F.
- Grease a 12-cup muffin pan and set aside.
- Mash the bananas with a fork in a large bowl.
- Add the eggs, vanilla, and honey and whisk together with the mashed bananas.
- Stir in the almond flour, baking soda, baking powder, salt, cinnamon, and Nutricost vanilla whey protein powder. Make sure not to over mix the batter.
- Fold in the almond butter with a baking spatula.
- Divide the batter into the 12 muffin cups, filling them 3/4 of the way.
- Bake for 15-25 minutes or until muffins are golden brown.
